Pasta Salad & Grilled Chicken

In this hot weather the last thing I want to be doing is standing around in the kitchen with the oven blasting and gas hob firing all cylynders. So tonight for tea I am making Pasta Salad with Grilled Chicken.

For the pasta salad you need;
tinned sweetcorn
red pepper
green pepper
shallots
any pasta you like, I usually go with De Cecco Fusilli
jar of majo
clove of garlic
squeeze lemon juice.

This is really simple to make, boil a kettle and then place this in a saucepan and onto your hob. Boil the pasta until cooked. In the meantime drain the sweetcorn, cut the peppers up small and dice the shallot finely and crush the garlic clove. Place all the vegetables into a pan with some olive oil and just fry off for 3-5 minutes. The serve you just add the vegetables to the cooled pasta and stir in majo until you get the consistency you like.

I then take a chicken breast and bash it with a rolling pin. Season with dried basil, salt & pepper and then fry in a pan adding a good squeeze of lemon half way through cooking. Then serve with the pasta salad!
