MJL Recipe of the Week… Aubergine Bake

This aubergine bake is great and pretty quick to make. In our house its more of an accompanying dish and works great with a piece of grilled chicken. All you need is some tomato passata, grated parmesan, oregano, breadcrumbs, aubergine and buffalo mozzarella. Start by frying off the aubergine in some olive oil, I slice them length ways or you can do disks. Once they have some colour on both sides put to one side and season with salt & pepper. In an oven proof dish layer the ingredients as follows; layer of aubergines, layer of passata, sprinkling of parmesan, layer of aubergines, layer of passata, layer of ripped up buffalo mozorella, a few pinches of oregano and then a good sprinkling of breadcrumbs. Drizzle with olive oil and bake in an oven until heated through and golden brown (and the mozzarella melted).
