Kids & Soup
Posted: 11/25/08As the days get colder, soup is a quick and easy tea for the family. But how can you get kids to eat soup? When I used to babysit for my godchildren who were fussy eaters to say the least I did find that involving them in the cooking helped. So here is an idea…
ingredients (family of 4);
left over roast chicken
1 red pepper
1 pint chicken stock
4 shallots
4 large potatoes
flour, salt & pepper
slices of white bread
method;
Fry off the shallots in a little oil on a low heat. Once these are cooked through (10-15 minutes) stir in 2 tablespoons of flour and then leave to one side and cool.
Place a pan ¾ filled with water onto boil. While this is boiling peel and cube the potatoes, then place into the water with a good few pinches of salt. Add 2 ladles of chicken stock to the water. Cook until they are soft and crumbly and then leave to one side (still in the water/stock)
Take a large baking dish and put the left over chicken, sliced red peppers & salt, pepper. Pour over the rest of the chicken stock. Then place in a medium heat oven.
After 15 minutes of being in the oven you can stir in the shallots, and stir in the potatoes. You can add stock from the potatoes to keep your chicken in the oven moist. The flour from the shallots and the startch from the potatoes will help thicken the chicken mixture.
After 40 minutes of cooking the chicken take out of the oven and blitz using a hand blender to make into a smooth mixture for your soup.
To make the croutons, get the kids to cut out shapes from the slices of bread. Place on a baking tray drizzle over a little olive oil and then cook in the oven until you have croutons. If your kids love cheese then you can put a little on top.
